When the temperature outside keeps rising, our body craves something cool, light, yet nourishing. At such times, kefir cold soup (kholodnik) comes to the rescue — a refreshing, vitamin-rich soup that has become a true classic of Ukrainian summers.

Kholodnik — more than just a soup

For those unfamiliar with this dish: kholodnik is a cold soup made with kefir, vegetables, and fresh herbs. Its charm lies in its simplicity and perfectly balanced taste. And best of all — it doesn’t require cooking! An ideal choice for hot days when you don’t want to turn on the stove.

Kholodnik is not only tasty but also healthy. It’s rich in vitamins, fiber, and antioxidants — perfect for light summer meals and a great way to prevent dehydration.


Classic Kefir Kholodnik Recipe

Ingredients (4 servings):

  • 500 ml kefir (2.5% fat)
  • 200 ml cold boiled water (optional)
  • 2 medium beets (boiled or baked)
  • 2 boiled eggs
  • 3 fresh cucumbers
  • 1 small red onion (or spring onions)
  • A bunch of dill, parsley, or other herbs
  • Salt to taste
  • Lemon juice or mustard (optional)

Preparation:

  1. Cool the boiled beets and grate them or slice into thin strips.
  2. Dice or grate the cucumbers.
  3. Dice the eggs.
  4. Finely chop the onion and herbs.
  5. Combine all ingredients in a large bowl.
  6. Add kefir and, if needed, water for desired consistency.
  7. Season with salt, add lemon juice or a little mustard for brightness.
  8. Mix well and refrigerate for 30 minutes to let flavors blend.

Serve with half a boiled egg or alongside boiled potatoes.


Tips & tricks:

  • Use chilled ingredients.
  • Let the soup sit before serving for a richer taste.
  • For extra freshness, add ice cubes directly into the bowl.

Kholodnik’s calorie content is about 50–80 kcal per 100 g, making it a great choice for those watching their figure.
